Taste a bit o' the (American) Oirish!

Well, today I tasted my first corned beef. My wife Kathleen (who is 1/4 Irish) made the traditional Corned Beef and Cabbage (which is apparently an American-Irish invention rather than pure Irish), keeping cabbage itself separate because I can't stand cooked cabbage (but don't mind Chinese Cabbage, which she substituted).

Corned beef is very good! And we saved some for one of my favorite dishes, hash. (So technically I suppose I've had corned beef before, but only in canned hash, and the corned beef taste is not the same in those cans).
